BIB'S 3RD BIRTHDAY CAKE


Bib's request for her 3rd birthday was "Chocolate.  And strawberries."

I baked a 6 inch chocolate cake and then at the last minute decided to change buttercream recipes.  I tried Rose's Heavenly Cake's Meringue Buttercream.  It was a pain in the you know what to make and the results though yummy were not worth the extra effort.  I have made other meringue buttercreams and this one is finicky and creates unnecessary anxiety.
The recipe even tells you it's going to curdle before it comes together.  That's not my idea of fun at 10pm at night. 

I need to go to sleep and I'll get back to the recipe soon.  I am so tired...

I hate when recipes are like that - lots of work w. not enough wow factor. It looks pretty though!

Yeah, it's painful, but you can never go wrong with butter and sugar in any combination! thanks!

yeah...my expectations for recipes are getting higher and higher now that I've got so many cookbooks and have tested so many!

I wish I could post the recipe, but it was such a headache I wouldn't wish it on my readers! hee hee! not blogworthy!

I admire you for staying up till 10 to make a cake - well, thats devotion for you! I am sure though the cake turned out wonderful - even if you had to go through the extra effort. :)

Regardless the "pain" you went thru preparing the buttercream, it looks perfectly fine to me! I'm sure Bib's would appreciate it! =)
