I think it would work, but you'd have leftover batter for sure. Remember to adjust timing (I have no idea what the timing is for chiffon cupcakes with this recipe). You may need to use liners for the chiffon to grab onto or it would be flat. They may not dome properly because it is a chiffon afterall.
